Sundried Tomato Pesto

So much chunkier and more textured than any bottled version I've tried, with actual visible bits of tomato rather than a smooth puree.

Made a quick Diwali pasta course, and this stole a bit of the spotlight.

Switched from a bottled sun-dried tomato pesto out of curiosity, and the difference in freshness was immediately obvious this tastes like actual tomatoes, not a jar that's been sitting on a shelf.

Boiled some fusilli, tossed it with a spoon of this, and dinner was ready in under fifteen minutes flat.

Served this as a dip with crackers at a small get-together first thing gone.

Tossed this with penne and a little pasta water, and the tangy depth of flavour needed almost nothing else added.

Used this as a homemade pizza base instead of regular sauce bold and rich.

Started using a spoon of this instead of mayo on sandwiches, and the tangy concentrated tomato flavour genuinely upgrades even a basic cheese and cucumber sandwich into something far more interesting to eat.

Spread this over toasted bread with a little fresh mozzarella for a quick bruschetta, and it disappeared before the mains were ready.

Warmed this up just for dipping garlic bread dangerously easy to finish a jar.
